The Vox Kitchen – it’s Jess Pratt – again!

The Canyon // SRAM rider and Zwift Academy winner has already rustled up these choc chip cookies, and a spinach and feta dish, and she is back once again with a cycling specific ride bar. Perfect for a mid-ride snack with a coffee!

Ride bars

Ingredients

1 cup of flour
1 cup of oats
3/4 cup of shredded coconut
125g of butter
Protein powder – optional
1 egg
1/4 cup of honey
1 teaspoon of cinnamon
1 teaspoon of ginger
Choc chips, dried fruit, whatever you so desire

Preheat oven to 200 degrees Celsius. Line a slice tin with baking paper.

Mix dry ingredients together in a mixing bowl.

Melt butter and add the honey and egg. Mix together.

Add the wet ingredients to the dry ingredients and mix until combined and then place mixture into slice tin.

Bake for approximately 20 minutes or until cooked through. Enjoy!
